  • 2 ripe mangoes peeled and diced
  • 1 red bell pepper finely diced
  • ½ red onion finely chopped
  • 1 jalapeño seeded and minced (adjust the heat to taste)
  • ¼ cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt to taste

Method
 

  1. Prepare mangoes. Dice mangoes into small cubes. Juicy but firm pieces hold well.

  3. Add lime. Squeeze fresh lime juice over the salsa and stir gently.
