Ingredients
  

  • 1 ½ cups 190 g all-purpose flour
  • 3 ½ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp sugar optional, for a touch of sweetness
  • 1 ¼ cups 300 ml milk
  • 1 large egg
  • 3 tbsp unsalted butter melted (plus extra for cooking).
  • 1 tsp vanilla extract optional but delightful

Method
 

Mix the Dry Ingredients:
  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Combine the Wet Ingredients:
  1. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
Blend & Rest:
  1. Gently fold the wet mixture into the dry ingredients until just combined. Small lumps are totally fine!
  2. Let the batter rest for 5–10 minutes; that’s the secret to it being extra fluffy.
Cook to Perfection:
  1. Heat a non-stick pan over medium-low heat. Add a dab of butter and pour ¼ cup of batter into each pancake.
  2. Cook until bubbles form on top, flip once, and cook for another minute or two until golden.
