Ingredients

  • 2 cups cooked rice (cold rice works best)
  • 1 cup diced Spam (cut into small cubes)
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tbsp soy sauce
  • 1 tsp garlic (chopped)
  • 2 Tbsp oil (vegetable or sesame)
  • Salt and pepper to taste
  • Spring onions (optional, for topping)

Instructions

  • Heat oil in a large pan over medium heat.
  • Add diced spam and cook for 3-4 minutes until golden and crispy.
  • Push Spam to the side, crack in the eggs, and scramble until fully cooked.
  • Add chopped garlic and stir for 30 seconds.
  • Toss in the mixed vegetables and cook for 2-3 minutes until soft.
  • Add cold rice and mix everything together. Break up any clumps.
  • Pour in soy sauce and stir until the rice is evenly coated.
