Ingredients

  • 2 cups cooked rice (cold, day-old rice works best).
  • 2 eggs
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • ½ cup cooked chicken or shrimp (optional).
  • 2 tbsp soy sauce
  • 1 tsp sesame oil (optional for flavour)
  • 2 tbsp of cooking oil
  • 1 TSP chopped garlic
  • Salt and pepper to taste
  • Spring onions (optional, for garnish)

Instructions

  • Heat 1 tbsp oil in a large pan over medium heat.
  • Crack the eggs into the pan and scramble them. Cook fully, then move them aside.
  • Add the rest of the oil and chopped garlic. Stir for 30 seconds.
  • Add the mixed vegetables (and meat if using) and cook for 2-3 minutes.
  • Add the cold rice and stir everything together, breaking up any big lumps.
  • Pour in soy sauce and sesame oil (if using). Mix well.
  • Add salt and pepper to taste, then mix in the cooked eggs.
  • Cook for another 1-2 minutes until hot.
  • Sprinkle spring onions on top before serving.
