Ingredients

  • 2 cups cooked white rice (cold is better).
  • 2 large eggs
  • 1 cup mixed vegetables (like carrots, peas, and corn)
  • 1 tsp garlic (chopped)
  • 2 tbsp soy sauce
  • 2 Tbsp oil (vegetable or sesame)
  • Salt and pepper to taste
  • Spring onions (optional, chopped for topping)

Instructions

  • Heat 1 tbsp oil in a large pan or wok over medium heat.
  • Crack the eggs and scramble them until cooked. Move them to one side of the pan.
  • Add the rest of the oil and chopped garlic. Stir for 30 seconds.
  • Add the mixed vegetables and cook for 2-3 minutes until soft.
  • Add the rice and mix well, breaking up any clumps.
  • Pour in soy sauce and mix everything evenly.
  • Stir in the scrambled eggs and cook for 1 more minute.
  • Add salt and pepper to taste, then sprinkle spring onions if using.
  • Turn off the heat and serve hot.
