Ingredients
- 2 cups cooked white rice (preferably cold).
- 2 eggs

- 2 tbsp soy sauce
- 2 Tbsp oil (vegetable or sesame)
- 1 tsp garlic (chopped)
- Salt and pepper to taste
- 2 spring onions (optional, chopped for topping)
Instructions
- Heat oil in a large pan or wok over medium heat.
- Crack the eggs and scramble them until fully cooked, then push them to one side.
- Add chopped garlic and mixed vegetables to the pan. Cook for 2-3 minutes.
