Ingredients

  • 2 cups cooked white rice (preferably cold).
  • 2 eggs
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 2 tbsp soy sauce
  • 2 Tbsp oil (vegetable or sesame)
  • 1 tsp garlic (chopped)
  • Salt and pepper to taste
  • 2 spring onions (optional, chopped for topping)

Instructions

  • Heat oil in a large pan or wok over medium heat.
  • Crack the eggs and scramble them until fully cooked, then push them to one side.
  • Add chopped garlic and mixed vegetables to the pan. Cook for 2-3 minutes.
  • Add cold rice and mix everything together. Break up any big rice clumps.
  • Pour in the soy sauce and stir well so the rice is evenly coated.
  • Season with salt and pepper to taste.
  • Sprinkle spring onions on top if using.
  • Turn off the heat and serve warm.
